What you're saying is to do with the actual content itself, not the approach to releasing the DLC. I think just saying "I got lots of hours from the game" avoids the problem with the DLC approach, as the way it current is released is not a factor that would have had much bearing on that playtime in comparison to if it was released in a more positive format. If they had done bigger releases, like say bundling several DLC packs together into an expansion for half the current individual price - but everything in that expansion is still the same as the DLC would have been- then you'd still get that content and it would be better for customers/players. You got 700 hours out of the game, which is great and i'm sure the DLC content greatly contributed to that amount of time, but i doubt it was was the method of releasing large amounts of small DLC without too much content in each while being overpriced that actually convinced you to play that long.
It's defending the negative aspect of the approach even though it doesn't relate to the part you like about it. I don't see how you can use that as a defense of the specific DLC model/approach, really. I've only recently started playing CK2 but this looks sort of interesting, at least. Still, it's great that more content is still being added. It's even worse when it's features that should have been in the game in the first place or when they acknowledge that their games weren't really released in a complete/finished state they were happy with, only to then sell you that content as DLC.
The content is nice, but the pricing and the way it's packaged and released feels somewhat scummy and like it's one of the worst ways to do it.

Some seem to defend it with stuff like "Just wait for it to go on sale" or "It's a bit extra to support the developers for giving you that free patch" but that doesn't make much of a difference to that negative perception of the whole DLC/Business model and the way they approach it - neither of those mean that the current method of releasing DLC feels like the right way or that it's a good thing to do it like that. If say the first 3 Stellaris DLC packs along with the portraits had been bundled into a £15 - 20 or so expansion that would have been fine, but half the time it feels like there just isn't enough that's substantial included. I enjoy the content that they do add, but it feels like it's going too far with large amounts of overpriced DLC that doesn't really contain enough for the price.
